BASIL AND PISTACHIO CRUSTED SEA BASS
SERVED WITH CHAMPAGNE SAUCE
Basil-Pistachio Crust
- 2 cups Soft Butter
- 3 cups White toast bread crumbs (fresh not dry)
- 1/2 cups Toasted chopped pistachio nuts
- 1 cup Chopped Basil
- 1 Egg yolk
- Salt
- Pepper
- Lemon Juice
Whip soft butter until is very fluffy. Than add all ingredients and adjust the seasoning to your taste. Place the mixture on a cling film and roll it to a sausage like roll and refrigerate till firm.
Sauce
- 1 medium chopped onion
- 1/2 cup Chopped leeks
- 1 stalk Chopped celery
- 2 tbs.?Butter
- 1 cup?White wine
- 3 cups?Fish stock or light chicken stock
- 3 cups?Heavy cream
- 2 Bay leafs
- Salt & Pepper
