Signature Dish

BASIL AND PISTACHIO CRUSTED SEA BASS
SERVED WITH CHAMPAGNE SAUCE

Basil-Pistachio Crust

  • 2 cups Soft Butter
  • 3 cups White toast bread crumbs (fresh not dry)
  • 1/2 cups Toasted chopped pistachio nuts
  • 1 cup Chopped Basil
  • 1 Egg yolk
  • Salt
  • Pepper
  • Lemon Juice

Whip soft butter until is very fluffy. Than add all ingredients and adjust the seasoning to your taste. Place the mixture on a cling film and roll it to a sausage like roll and refrigerate till firm.

Sauce

  • 1 medium chopped onion
  • 1/2 cup Chopped leeks
  • 1 stalk Chopped celery
  • 2 tbs.?Butter
  • 1 cup?White wine
  • 3 cups?Fish stock or light chicken stock
  • 3 cups?Heavy cream
  • 2 Bay leafs
  • Salt & Pepper

In a heavy duty sauce pan melt butter and add onions, celery , leeks and bay leafs, saut
